We source all of our meats from five local ranches within 100 miles of the restaurant’s front door. ‘Triple Strand Ranch’ and ‘Sunset Ranch’ are in Baker, Florida… ‘River Woods Ranch’ is in Jay, Florida… ‘Lillian Cattle Company’ is in Lillian, Alabama… V3 is right here in north Pensacola!
Wendy Aliff of ‘Aliff Acres’ and ‘Bush Farms’ of Alabama are our primary sources for produce.

With our roots in some of the best restaurants in the Dallas area, we do make every effort to offer ‘white-tablecloth’ service to every guest.
Our guests have always come a bit ‘spruced up’ to our dinners but no one is ever out of place in our home!

We fill in the gaps with ingredients from heirloom growers such as Marsh Hen Mills, Rancho Gordo, and Two Brooks Farms.
Our pantry staples such as olive oil, salt, and flours are all selected to match the quality of the world’s finest restaurants with many companies being locally owned.

Though we do welcome walk-ins, reservations are encouraged so that we maintain a healthy stock in our kitchen.
To ensure that food waste is non-existent in our establishment, we sometimes purchase ingredients on a daily basis. This is to make certain that the freshest ingredients make it to your plate. By letting us know you will be joining us, we can be certain to grab a few more heads of hydroponic lettuce from Vitina, a few more chops from Clayton, or a few more squash from Wendy and on…

With our license we can not allow outside wine, spirits, or beer to be brought in.
Ian earned ‘Certificate Level’ as a Sommelier through the Court of Master Sommeliers almost twenty years ago and was preparing to sit for the ‘Advanced Level’ prior to making a shift to the back of house….
So…… naturally we do have a well-curated short list of both old-world classics and new-school funky wines that are available by the glass, by the bottle or for purchase to add to your collection!
You will no doubt find something unique at our tasting events so be sure to mark your calendars!

Working with a collection of wine nerds and geeks we keep our collection rotating so that no one gets bored with the same old selections.
We keep labels that you love and will continue to add as we grow so that the collection is as much yours as it is ours.
This already includes the last available bottles of the 2018 vintage of the famed Chateau Lagrange from Bordeaux and the ‘Rose & Arrow’ Willamette Valley Pinot Noir 2023 with only 750 case production.
If you want it, our team will hunt it down for you!

We understand not every child is as adventurous an eater as we as parents wish they would be.
For this reason we do keep our favorite dried pasta at the ready to boil for the picky eaters. We are always happy to whip up a quick tomato or cheese sauce if the ingredients are available but ask that such requests are reserved for small children.

We also own and run Pensacola Catering and have a passion for the details in event planning. We can help you host events from groups of 20 to 200.
We value the personal touches of hospitality so for very large groups, we have a list of fellow caterers that specialize in groups over 200.

We do accept reservations for groups of 6-20 with a planned menu and the entire space may be made available with certain food and beverage minimums met.
